Happy Hour: The Firework

I LOVE The Fourth of July.......all the BBQs, long warm nights, and summertime vibes all get me in a serious party mood. When I was a kid I couldn't wait to play with fireworks, that is until I nearly burnt off my scalp lighting a roman candle. So nowadays I like to sit on the sidelines in a rickety lawn chair and watch all the action while drinking a fabulous cocktail inspired by the celebratory day... and trust me on this one - you won't need the adrenaline rush lighting fireworks with all the Pop Rocks bursting in your mouth in this cocktail!

Ingredients:

-1 1/2 Ounces of Jose Cuervo Blue Agave Tequila......keeping with the Red/ White/ Blue theme...
-1 Ounce Blue Curacao
-1 Ounce Pineapple Juice
-1/2 Ounce Fresh Squeezed Lime Juice
-Prosecco...... You can buy the cheap crap since it's used as a float to top
-3 packets of Cherry Flavored Pop Rocks.... THE key ingredient
-Rock Candy Stir... I blinged mine out with a firework inspired Pom-Pom
-Ice Cubes
-Full- Bodied Wine Glass... You can fit more in it and.... it's the 4th!! Celebrate!
-Cocktail Shaker

Combine the Tequila, Blue Curacao, Pineapple Juice and Lime Juice in the cocktail shaker and shake vigorously. Put a small amount of Pineapple juice on an edged plate and dip the edge of the glass to coat the rim. Pour out all of the Pop Rocks on a clean, dry plate and dip the rim of the freshly moistened glass into the Pop Rocks until well coated. You may need to coat it a few times to get a well covered rim, but the Pop Rocks will stick very well to the rim if coated properly.

Next fill the glass 1/2 way full of Ice Cubes and pour the alcohol mixer into the glass. Finally, pour the Prosecco on top of the cocktail to fill the glass and garnish with the Pommed-out rock candy stirrer.

This cocktail is a serious FIREWORK in your mouth every time you take a drink....The Pop Rocks are an amazing explosion, and your cocktail will be the hit of the party! Everyone will be talking about how amazing and fun this drink is. So enjoy the holiday, celebrate our Independence, (the time off from work), and ring in the day in style with this ultra fun cocktail!
